Carrot cake with cream cheese frosting
Ingredients
Cake
Wet ingredients
- 4 large eggs
- 2 cups sugar
- 1 cup vegetable oil
- 1 tsp vanilla
Dry ingredients
- 2 cups flour, plus more for dusting pan
- 1 tsp baking powder
- 2 tsp cinnamon
- 1.5 tsp baking soda
- 4-5 cups grated carrot (about 1.5lb)
Frosting
- 8oz cream cheese
- 1 stick salted butter, plus more for greasing pan
- 1 lb. confectioner’s sugar
- 1/4 tsp vanilla (optional)
Directions
Cake
- Preheat oven to 350ºF
- Cream eggs, sugar, oil, and vanilla together
- Combine flour, cinnamon, baking soda, and baking powder until well mixed
- Combine wet and dry ingredients and beat well, then mix with grated carrots
- Use butter to grease a 14x10 cake pan, then dust the inside with flour
- Bake 30min or until a toothpick inserted in the center come out clean (it will probably take more than 30min)
- Cool completely before frosting
Frosting
- Cream together cream cheese, butter, and confectioner’s sugar. Optionally beat in 1/4tsp vanilla.
