Vegan Chewy Ginger Molasses Cookies
Makes about 30 cookies.
Ingredients
- 2 c all-purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1.5 tsp ground cinnamon
- .5 tsp ground nutmeg
- .5 tsp ground cloves
- .5 c vegan margarine
- .75 c sugar, plus extra for rolling
- .5 c molasses
- 1 tbsp water
Directions
- Preheat the oven to 350ºF. Line 2 or 3 large baking sheets with parchment paper or Silpat.
- In a medium bowl, whisk flour, baking soda, baking powder, ginger, cinnamon, nutmeg, and cloves.
- In a stand mixer, beat margarine, sugar, molasses, and water until well combined.
- Slowly beat in flour mixture.
- For each cookie, scoop about 1 tbsp of dough and roll in sugar.
- Bake 10-12 minutes on the prepared baking sheet, then let cool on the pan.
