Oatmeal Peanut Butter Cookies
Ingredients
- 1 cup peanut butter
- 3/4 cup pure maple syrup, agave syrup, or honey
- 2 egg whites
- 1 tsp. vanilla extract
- 3/4 cup all-purpose flour
- 3/4 cup oats
- 1/2 tsp baking soda
Directions
- Mix peanut butter, egg whites, syrup, and vanilla together in a small mixing bowl.
- In a separate larger bowl, combine flour, oats, and baking soda.
- Add the wet ingredients to the dry, stir to combine.
- Refrigerate for at least 30 minutes, or as long as 4-5 hours.
- Preheat oven to 375F.
- Bake 10-12 minutes, or until lightly browned on top.
