Peanut Butter Miso Rice Crispies Treats
Makes 20 squares
Ingredients
- 8 cups rice crispies
- 1/2 cup unsweetened peanut butter
- 2 tablespoons white miso paste
- 2 teaspoons vanilla extract
- 16oz regular marshmallows, cut in half
- 1/2 tsp kosher salt
- 1 stick unsalted butter
Directions
- Line 2 8” loaf pans or 1 8x8” glass baking dish with parchment paper
- Brown butter over medium heat until nutty and toasted, 3 minutes, swirling the pan towards the end
- Turn heat to low and stir in vanilla, peanut butter, miso, and salt. Add all the marshmallows except 2 cups and stir until smooth.
- Add the cereal and remaining marshmallows and fold to combine
- Transfer to the loaf pan and compact with fingertips
- Chill 30 min then slice into cubes
