Sandi Gant’s Sweet Potato Pie
From a collection of recipes my mother-in-law gave my wife when she went to college. A family holiday classic.
Note: this recipe makes 2 pies.
Ingredients
- 1/2 cup butter
- 1/2 cup miniature marshmallows
- 2 cups canned peeled cooked sweet potatoes
- OR 2 large sweet potatoes, peeled, large diced, and boiled until fork-soft
- 3 eggs slightly beaten
- 1.5 cups sugar
- 1 tsp. cinnamon
- 1 tsp. nutmeg
- 1/2 cup brown sugar
- 1 can (5.5oz) evaporated milk
- 2 9” pie crusts
Directions
- Preheat oven to 425ºF
- Cook marshmallows and butter in medium sauce pan over low heat, stirring until smooth
- Combine sweet potatoes, marshmallow mixture, sugar, brown sugar, and spices
- Add beaten eggs and milk to the sweet potato mixture and pour into crusts
- Bake 10 minutes at 425ºF
- Reduce heat to 350ºF and bake an additional 50-60 minutes
