Sandi Gant’s Sweet Potato Pie

From a collection of recipes my mother-in-law gave my wife when she went to college. A family holiday classic.

Note: this recipe makes 2 pies.

  1. Preheat oven to 425ºF
  2. Cook marshmallows and butter in medium sauce pan over low heat, stirring until smooth
  3. Combine sweet potatoes, marshmallow mixture, sugar, brown sugar, and spices
  4. Add beaten eggs and milk to the sweet potato mixture and pour into crusts
  5. Bake 10 minutes at 425ºF
  6. Reduce heat to 350ºF and bake an additional 50-60 minutes
