Jer’s Crispy Fried Chicken

  1. Soak the chicken thighs in buttermilk for an hour.
  2. Meanwhile, mix flour, garlic powder, black and white pepper, cayenne pepper, onion powder, and baking powder.
  3. Heat shortening in a dutch oven until it reaches 375ºF.
  4. When the oil is ready, pour some reserved buttermilk into the flour mixture and stir it with your hands so that it makes tiny sticky chunks.
  5. Dredge the chicken in the mixture and fry it for 8 minutes on each side.
