Modern Greek crunch
A clone/approximation of a JustSalad salad. Makes 2 large servings.
Ingredients
- 1/2 - 3/4 cup Turmeric-tahini dressing
- 1.5 heads of romaine lettuce, cut into ribbons and rinsed
- 1 cup halved cherry tomatoes
- 3-4 persian cucumbers, halved lengthwise and sliced into thin half moons
- 2-4 spoonfuls quick-pickled red onions
- 1/2 cup crumbled Feta
- 1 cup cooked chickpeas
- 1 cup pita chip crumbs (crushed pita chips)
Directions
- Toss all ingredients in large bowl and serve
