Holiday Mashed Carrots
Ingredients
- 2lb carrots
- 1 stick (1/2 cup) butter, softened
- salt and pepper
Directions
- peel and cut the carrots into 1” segments
- boil the carrots in a pot of water until a thick segment can be cut in half with a spoon
- strain the carrots and return them to the same pot (off the heat)
- add the butter and roughly mash the carrots
- when the carrots are roughly mashed, add salt and pepper to taste
- serve immediately, or keep warm in a 175º oven until service
