Holiday Mashed Carrots

Directions

  1. peel and cut the carrots into 1” segments
  2. boil the carrots in a pot of water until a thick segment can be cut in half with a spoon
  3. strain the carrots and return them to the same pot (off the heat)
  4. add the butter and roughly mash the carrots
  5. when the carrots are roughly mashed, add salt and pepper to taste
  6. serve immediately, or keep warm in a 175º oven until service
