Holiday Mashed Potatoes
Ingredients
- 2-3lb Russet potatoes
- 1 stick (1/2 cup) butter, softened
- 1/2 pint heavy cream
- roughly 1 cup grated asiago cheese
- salt
- pepper
- MSG
Directions
- peel, cube and boil the potatoes until you can easily cut one of the cubes in half with a spoon
- strain the potatoes and return them to the same pot (off the heat)
- add the butter and heavy cream and begin to mash the potatoes
- when the potatoes are mostly smooth, add the asiago cheese and continue to stir and break up smaller lumps
- add salt, pepper, and a small amount of MSG
- serve immediately or keep warm in a 175º oven until service
