Sandi Gant’s Sweet Potato Casserole
From a collection of recipes my mother in law gave my wife when she went to college. A family holiday classic.
Ingredients
- 2 eggs, well beaten
- 3 cups peeled, cooked, mashed sweet potatoes
- 1/2 cup milk
- 1 cup butter, divided into two half-cup pieces
- 1 cup sugar
- 1 tsp. vanilla
- 1/4 cup flour
- 1/4 cup brown sugar
- 1 cup chopped pecans
Directions
- Preheat oven to 400ºF
- Combine sweet potatoes, milk, 1/2 cup butter, sugar, eggs, and vanilla in a large bowl
- Pour into a medium greased casserole dish and bake for 20 minutes
- Combine 1/2 cup butter, flour, brown sugar and pecans; spread over the potato mixture
- Reduce temperature to 250ºF until melted
