Minestrone
Ingredients
- 1 can (28 ounces) diced tomatoes
- 1 large carrot, diced
- 1 large onion, diced
- Chicken broth
- 1 can (15 ounces) cannellini beans, drained and rinsed
- or dried beans, cooked and drained
- spinach
- pasta (short, textured shapes, like ditali, orecchiette, or cavatappi)
- salt and pepper to taste
- 1/2 cup grated Parmesan cheese
Directions
- Combine the tomatoes, carrot, onion, spinach, beans, and chicken broth in a large pot. Bring to a boil, then reduce heat and simmer for 10 minutes.
- Add the pasta and cook until tender, about 10 minutes.
- Stir in the Parmesan cheese and serve.
